Stuffed Pepper Cups

Ingredients:

    • 6 med green peppers

    • 1 lb ground beef

    • 1lb can diced tom.

    • ½ cup water

    • ½ cup uncooked long grain rice

    • 1/3 cup onions

    • ½ tsp salt

    • Pepper (dash)

    • 1 tsp Worcestershire sauce

    • 4 oz shredded sharp cheese (1 cup)

Directions:

Cut off tops of peppers – remove seeds & membrane

Precook in boiling salted water about 5 minutes. Sprinkle inside of cups generously with salt. Cook beef and onions until meat is lightly browned. Season with salt & pepper. Add tomatoes, water, rice & Worcestershire sauce. Cover & simmer until rice is tender, about 15 minutes. Stir in cheese. Stuff peppers, stand upright in baking dish. Bake uncovered at 350° for 20-25 minutes
