Layered Mixed Vegetable Salad

Ingredients

  • 1 head lettuce, finely chopped

  • ½ cup chopped green or red onion

  • ½ cup (1 stalk) chopped celery

  • ½ cup (1 small) green pepper

  • 1 1/3 cups (7 oz) uncooked frozen peas, drained

  • 1 cup mayonnaise or salad dressing (I use ranch dressing)

  • 2 Tablespoons sugar

  • 8 oz shredded cheddar cheese

  • ½ cup imitation bacon bits or 10 slices fried, crumbled bacon

  • 8 oz can water chestnuts, drained and sliced

Directions

In large bowl (looks nice in a clear bowl) layer lettuce, onion, celery, green pepper and peas - spooning dressing on each layer. Sprinkle sugar, cheese and bacon on top.

Cover and refrigerate at least 8 hours.

Add water chestnuts and toss just before serving
