Eggplant Parmesan

  • 1 Eggplant

  • 15 oz can Diced Tomato

  • at least 4oz Mozzarella Cheese

  • to taste Grated/Shredded Parmesan Cheese


Peel eggplant.

Slice and quarter peeled eggplant.

Boil until color changes from light green to greyish (~10 minutes).

Preheat oven to 325Β°

Combine drained eggplant, diced tomatoes, and at least 4oz shredded mozzarella cheese in baking dish.

Cook 20-30 minutes at 325Β°.


Add Parmesan cheese prior/after to cooking.
